Lunchbox: Gluten Free Vegan Lentil-Veggie Enchiladas

What’s for lunch? Homemade lentil-veggie enchiladas (I used the linked recipe for tacos, then wrapped the filling in brown rice tortillas and topped with my favorite enchilada sauce, then baked at 350 until warm inside), brown rice, sliced apple pears, and raw cacao thin mint balls! 100% organic, non-GMO, gluten-free, and vegan! Oh the things I do for my kids.
