My husband went grocery shopping this week, and he must have ventured down an isle that he normally doesn’t visit that contained BBQ Sauce because he came home with a new bottle of Organicville Original Organic BBQ Sauce (gluten-free, vegan, no added sugar). That one little purchase made him a confident chef. One night we had BBQ sauce-glazed tofu, and the other night we had BBQ portobello mushroom tacos. So simple and so delicious.
The recipe for each vegan BBQ-glazed item:
1. Cut your food item of choice into bite-size pieces. For the tofu, the block was cut into 1/2″-wide rectangles; for the portobellos, they were cut in long strips
2. Smother BBQ sauce on your food item of choice and let it sit while you heat 2 T of organic vegetable oil in a skillet over medium heat.
3. Add the smothered food item to the skillet and heat until it reaches your desired level of done-ness. For the tofu, we enjoyed it crispy. For the portobellos, we enjoyed them soft and finished the cooking by lowering the heat to simmer with the lid on.
4. Serve! Tofu was served over rice with greens. Portobellos were served in corn tortillas with sliced avocados and chopped tomatoes.
Note to self: must quadruple each of the recipes next time!
My review? Absolutely delicious, healthy, it kept us from eating out another night, and my husband was stoked that he cooked a quick and tasty dinner. Sometimes I get so bogged down by making everything from scratch that it’s nice to grab a healthy convenience food to build your meal around. But now it’s probably time for me to craft my own delectable sauce…
