These snack balls are packed with protein. Did you know that there are 33 grams of protein in one cup of cooked quinoa? It makes this grain a powerhouse of nutrition, especially for vegans or people who are trying to cut back on meat products and still want to maintain their protein intake. Plus, plants with protein are much more efficiently absorbed by the body than animal products.
This recipe was circling around Facebook, and it’s a yummy one! I doubled the recipe, and my kids could not taste the quinoa. I also made a few tweaks based on our own preferences.
3/4 cup gluten free rolled oats
1/3 cup shredded coconut
1/2 cup cooked quinoa
1/2 cup Enjoy Allergy-Free chocolate chips
1/4 cup Sunbutter
1/4 cup grade b maple syrup or raw local honey
1/4 cup ground flax seeds
1 tsp ground cinnamon
1/2 teaspoon vanilla extract
Add all ingredients to a bowl, and stir until well-combined. Form into bite-sized balls, making sure to pack the balls well to avoid falling apart. Eat immediately or set in the freezer for 10 minutes. Store in the refrigerator, but they won’t last long!
