My Breakfast of Choice: Vegan Overnight Oats

Yesterday my sister let me borrow her brand new copy of The Oh She Glows Cookbook, so I committed myself to testing out a recipe right away. I initially loved this blog because of the Vegan Overnight Oats (VOO) veganovernightoatsrecipes, and she had so many different variations to choose from. The only catch to VOO is that you have to pre-plan by “making” it the night before. I use the word “making” in quotations because it’s just a matter of throwing a few things together in a bowl that will soak overnight versus actually putting together a full meal the day before. This basic recipe for Easy Vegan Overnight Oats that is also in her cookbook has always been a hit, and it was just as tasty today. Instead of the smashed banana, my kids prefer frozen or fresh blueberries that plump up overnight, and I also like adding raw local honey.

I suggest visiting her blog and entering “vegan overnight oats” in the search box to see all the other yummy options. After I get home from morning workouts, I always add a scoop of my favorite protein powder, Sunwarrior Raw Vegan Protein Powder: Vanilla, to my VOO and smoothies — just be sure to add extra liquid until it reaches your desired consistency.  (Note: Do not confuse it with the Warrior Blend in Vanilla because it tastes completely different.)

Protein Power Snack Balls

I was starving and bored at work today, so I ran home to make a kale quinoa salad, and I threw together some Crunchy Raw Protein Balls because I was craving chocolate. Second time I’ve made them in a week. Definitely a winner! I didn’t use sesame seeds, used unsweetened sunflower seed butter instead of almond butter (and I would use only 1/4 cup next time), and added Enjoy Chocolate Chips. Also rolled a few around in raw shredded coconut to mix it up a bit.
